Pot roasts are simple. You throw the meat in a crock pot with some liquid and whole vegetables and return five hours later.
Cheese.
Baking food is also fast and simple. You can take two boneless skinless chicken breasts, salt them, put them on a baking sheet, scatter vegetables around them (I like beans or broccoli) and bake at 400, removing the veggies after 20 minutes.
A decent cooked fish is rather simple. You just pat it dry, salt, put in a hot pan skin side down. If you want, you can add white wine and seasonings, ladle the liquid over the fish as it cooks. Don’t flip. Remove.
My advice is to buy a food processor. Then you can make salsas and sauces or just chop vegetables in a few seconds and all you have to do is toss the thing in a dishwasher or since it.and have a really good non stick pan.
