I recommend that instead of ice cream, you fill the chocolate sphere with heavy whipping cream made fresh. I’ve also done this with sugar, but for most, the idea of tempering it and creating the sugar globe like a glass blower is a bit of a headache.

Being allergic to latex I’m always worried seeing these things done with balloons. Do they make special balloons that won’t risk contaminating the food?

Yes, I think they do. You can also use silicone molds.

That’s good to know. I think if I had the patience to do this I’d rather use the molds then risk the balloon.
